Tip for making the perfect french toast - leftover, stale bread!
This is a perfect way to finish any extra breads that have dried out.
You need stale bread to absorb as much custard as possible, using fresh bread will not get the same result.
Stale bread | 6 pcs |
Whole eggs | 4 pcs |
Caster sugar | 4 tbsp |
Milk | 60ml |
Cream | 100ml |
Butter | 6 tbsp |
Caster sugar (for caramel) | 6 tbsp |
In a clean bowl, mix the milk and cream together.
Crack 4 eggs into the liquid.
Add 4 tablespoon of caster sugar into the custard mix.
Here I used an immersion blender to combine everything thoroughly.
If you do not have an immersion blender, a whisk works just as fine.
Soak the bread in the custard mix for about 15 seconds each.
Once all the bread has been soaked and absorb all the goodness, set aside and we are going to warm up our pan.
Throw in a tablespoon of butter and sugar, and wait until the sugar has melt and turn slightly caramel in color.
Gently place a slice of the soaked bread on top of the pan and cook for about 30 seconds on each side.
Be careful to not burn the sugar as the caramel will become bitter.
When you flip the toast, make sure each side of the bread is well-browned and caramelized. This is crucial as the crispy caramel layer adds a lot of difference to the overall enjoyment experience.
