Peel the onion and garlic and quarter the onion. Finely chop the garlic.
Add olive oil to a medium-sized pot first. Add onion, garlic, chopped pumpkin and spices.
Add the vegetable broth to the pot and bring it to a low heat. Simmer for 5 minutes to combine the vegetables with the broth.
Then add the water and turn the heat to medium-high. Cover the pot with a lid. Let it stay on medium-high heat until it boils. After it boils, lower the heat to medium and cook well until all the vegetables are mashed.
After the soup is cooked and has the desired consistency, blend it with a blender until it is completely smooth.
After the soup is smooth, lower the heat and add the milk and butter at room temperature. Stir well. Boil for five minutes. Turn off the heat, add salt and stir well.

You can start preparing the croutons while the soup is cooking! First, cut the toast bread into cubes.
Put the chopped bread in a mixing bowl. Grate the garlic finely. Add olive oil, garlic and spices. Mix well.
Arrange the bread slices on a baking sheet lined with parchment paper, without overlapping them. Bake in a preheated oven at 392 F for 10 minutes until the croutons are golden and crisp.

Take the cream in a saucepan and add the parmesan cheese. Heat over low heat until the parmesan melts. Stir constantly to prevent lumps. When it reaches a homogeneous consistency, turn off the heat and add salt and stir well. You can take it to a gravy boat for serving.
