Original recipe did not call for vegetables, I have added it in here to make the meal more wholesome. We gotta practice balanced diet people!
Rinse the rice until the water runs clear, drain the water away, pour in two cups of fresh water and cook in rice cooker for 35 minutes or until done.
This recipe can make for one hungry person.

Whole eggs | 2 pcs |
Spam | Half can |
Onion, sliced | Half bulb |
Unsalted butter | 1 tbsp |
Vegetables | 200g |
Salt and pepper | To taste |
Mayonnaise | To drizzle |
Dice up your spam meat and place them into a bowl.
With some oil in the frying pan, sear the spam meat on medium heat to give them a nice brown crust, then set aside.
Once the spam meat are done, deglaze the pan with some cold water, set aside this liquid.
Sauté the onions with some oil with medium low heat. Keep stirring constantly to avoid burning the onion. If they start to stick to the bottom of the pan, deglaze with a little bit of the brown juice that we got earlier.
Continue until the onions slices are fully cooked and caramelized. This might take awhile.
When we wait for the onions to cook, boil a pot of water and blanch the vegetables for a quick 5 minutes, season with salt and pepper and set aside.
Crack two eggs into a small bowl and whisk them up with a fork, season with salt and pepper. Add in the spam meat together and turn the heat to high, once you hear sizzling noise, turn off the heat and add in the eggs. Gently scrap the side of the pan to avoid the eggs from sticking to the pan and cook till your desired doneness.
If you prefer a runny texture, remove the pan away from the heat once you see the eggs have almost fully cooked, otherwise just cook until it's done.
Scoop the rice into bowl and place the egg onion spam mixture over the top of the rice.
Squeeze some mayonnaise over the top of the deopbap and enjoy while its hot!
